Shiitake mushrooms are known as savoury flavour enhancers, always good to have on hand for adding to dishes as dried Shiitake is more flavourful than fresh mushrooms. Soak it in luke-warm water for 30 minutes, squeeze dry and use as you would fresh mushrooms. The leftover liquid can be used a a delicious vegetable stock in soups or noodle dishes.
